This hand-carved Iberico Bellot ham is a fine example of classic Spanish tapas. It is made from 75% Iberico pigs that have been fattened up on acorns in the last 10-12 weeks of their lives, before the ham is cured for between 30 and 36 months, where it is there hand carved by a master carver.
