This Salchichon is made from the meat of Iberico pigs that have been fattened on acorns in the last 10-12 weeks of their lives. The Salchichon is the equivalent of a classic Italian salami, simply seasoned with salt and pepper, which allows the sweet, nutty flavour of the pork to come through beautifully.
