This gluten-free pasta is so good you wouldn’t know it was gluten free. It uses the best corn and rice that Italy has to offer, as well as fresh spring water from the neighbouring Dolomites Mountains before it is slow dried for 18 hours to maintain nutritional content and not compromise the flavour and texture. Cavatappi or ‘corkscrew’ pasta is similar to macaroni, making it great for salads and soups, and is often served with a cheese and tomato sauce.
